  7. Bake at 180c for 1 hr. Check if an skewer comes out clean from the centre of cake that means it's done.
  8. Cool completely on a wire rack for 2 hrs before cutting into slices.
  9. Note. Can be made plane and only topped with crushed dry fruit of choice. Instead of candied fruit raisins can also be used.

In another bowl, cream shortening and sugar until light and fluffy. Combine dried fruits, candied ginger and both zests. Place fruit and liquid in a non-reactive pot with the sugar,. Add the walnuts, dates, cherries and mangoes; toss to coat. Slowly pour remaining rum over cake.
