  12. Make ready 180 C oven

Simple Boiled Fruit Cake is Minimalist Baking. This is a fruit cake made with minimal ingredients compared to a traditional fruit cake that you might make for Christmas. It also comes together with a lot less making. Yet you achieve the beautiful richness of a fruit cake, spiced and buttery with lots of fruit.

Steps to make Boiled fruit cake:
  1. Place crushed tropical fruit, dried fruit, butter, sugar, vanilla essence and brandy in a saucepan and heat gently until the butter has melted.
  2. Bring mixtures to the boil and then simmer for approx. 5 minutes
  3. Cool
  4. Sift plain flour, self-raising flour and bicarbonate of soda together
  5. Add beaten eggs to cooled fruit mixture. Stir gently.
  6. Add dry flour mixture and stir.
  7. Place mixture in a prepared 20cm round cake tin. Sprinkle with sugar for a crunchy top (optional).
  8. Bake 180C for approx 1.5 hours. Skewer test the middle after 1 hour 15 minutes to check if the cake is cooked or needs a little longer. Cool slightly then turn out onto a wire rack to cool fully.

Method Melt butter over low heat with brown sugar, golden syrup, mixed fruit, cinnamon, nutmeg and rum. Turn off heat, add bicarbonate soda and mix thoroughly.
