  8. Mix the eggs and butter milk in the solution then add half of the sieved flour (which is incorporated with baking powder) and fold in as you add the rest of the flour
  9. This is the mixture consistency in a baking tin. You can spread some cashew nuts and raisings on top of the batter then bake.
  10. Bake for 40 minutes

This is a fruit cake made with minimal ingredients compared to a traditional fruit cake that you might make for Christmas. It also comes together with a lot less making. Yet you achieve the beautiful richness of a fruit cake, spiced and buttery with lots of fruit. Melt butter over low heat with brown sugar, golden syrup, mixed fruit, cinnamon, nutmeg and rum. Turn off heat, add bicarbonate soda and mix thoroughly.
