  1. Prepare 300 g self raising flour
  2. Prepare 125 g butter in cubes
  3. Take 125 g golden caster sugar
  4. Prepare 75 g walnut pieces plus extra for decoration

  6. Prepare 2 eggs
  7. Get 125 ml milk
  8. Take 125 g marmalade

Steps to make Marmalade and walnut muffins:
  1. Rub the butter with the flour until it resembles breadcrumbs. Add the lemon zest and walnut pieces.
  2. Mix the eggs milk and marmalade
  3. Add the sugar and marmalade mixture into the crumble and mix together
  4. Pour spoonfuls of mixture into prepared muffins tin.
  5. For decoration you can use some walnut pieces with a bit of melted butter and a splash of maple syrup. Spoon over muffins and bake on a moderately hot oven. 180°C for 20 to 25 minutes
  6. I forgot to add the decorations so baked muffins nearly to the end and added walnuts for the last 3 minutes

These delicious muffins came out of my Classic Holiday Cooking book and are as easy as they are good. I like to serve these on Christmas morning with my Kids Favorite Breakfast Casserole. Orange marmalade gives this homey pumpkin muffin recipe a unique flavor. In the bowl of a large food processor, combine both flours with the oats, sugar. Barely fold the marmalade through the batter (it should still be streaky).
