  1. Get Yeast Mix
  2. Make ready 2 tsp Yeast
  3. Get 2 tsp Sugar
  4. Get 1 cup Warm water
  5. Prepare Dough
  6. Take 2,1 /2 cup Whole wheat Flour
  7. Prepare 2 tbsp Olive oil
  8. Make ready to taste Salt
  9. Get Stuffing
  10. Get 1 each Bell peppers all 3 colour
  11. Prepare 10 Cherry tomatoes
  12. Get 1/2 cup Mozerella cheese
  13. Get As needed basil leaves few
  14. Make ready 1 tbsp Oregano
  15. Prepare 1 tbsp Basil powder
  16. Make ready 1 tsp Garlic powder

Put the flour, yeast, salt and rosemary in a mixing bowl. This stuffed focaccia is so delicious and such a crowd pleaser. I make this bread so much that I don't even need the recipe anymore. I take the dough, divide it in half and put one piece in a spring form (cheesecake) pan.

Steps to make Stuffed Focaccia:
  1. Take the yeast in a glass and add the sugar and gradually add the warm water and whisk well. cover and let the yeast bloom for 15 mins
  2. Take the flour and add the yeast and knead a dough. once the dough comes together, add the olive oil and knead the dough for at least 15 mins.
  3. Apply some olive oil all over the dough and let the dough rise
  4. After 1 hrs the dough had all doubled up punch the dough and divide the dough into 2
  5. Take a spring pan and grease it. place 1 layer at the bottom apply olive oil
  6. Arrange all the bell pepper slices,spread fresh basil leaves. Sprinkle all the spices.Add grated Mozzarella cheese
  7. Sprinkle some cherry tomatoes too.
  8. Arrange another layer of the dough, spread olive oil. Arrange some onion slices and olive slices
  9. Let the dough rise for 30 min
  10. Preheat the oven at 180 degree c and bake the focaccia for 40 to 45 min
  11. Serve hot with some pizza sauce

I make this bread so much that I don't even need the recipe anymore. I take the dough, divide it in half and put one piece in a spring form (cheesecake) pan. These scacce were made by one of my cousins, Franca. She lives in Ragusa and these focaccia-like stuffed breads are typical of that region of Sicily (south east and the chief cities are Ragusa, Modica, Noto). There are many focaccia-like stuffed breads made all over Sicily.
