This is why it is soooooooooo delicious!). My focaccia rose beautifully, but it definitely needs some salt in the topping. The next time I make it, I will sprinkle garlic salt before adding the mozzarella. This is a great recipe, it just needs to be a little more clear for the cook who isn't all that familiar with bread baking.

The word focaccia (pronounced "foh-KA-cha") has Latin origin. Focus - means fire and Panis focacius literally means "a flatbread baked in the coals". Often, with the word focaccia people refer to all its possible variants. However, this term mainly refers to the classic Focaccia Genoese.

Steps to make Focaccia:
  1. Dissolve the yeast with some water and sugar.
  2. Put Maida, olive oil, water, sugar, salt and dissolved yeast and chilli flakes, oregano. Mix untill dough is Formed.
  3. When your dough is ready cover it with cling film and allow it to rest for 1 hour. Or untill it doubles in size.
  4. Put the dough into greased Poe dish. Put a little olive oil over it to flatten it out with your fingers.
  5. Use your fingertips to make some craters into the flatten dough. This is the crucial step in making focaccia.
  6. Top it with capsicum, onion and tomato slices.
  7. Add some oregano, chilli flakes, parmesan cheese, blackpepper, and some olive oil.
  8. Place it in the Microwave and bake it at 180°c for about 20-25 minutes.

It's about ½ inch thick, a little chewy but still soft inside with a delicious olive oil. Focaccia al rosmarino 'focaccia with rosemary' is topped with rosemary. It may be served as an antipasto, table bread, or snack.
