  2. Take Olive oil or Butter

  1. Preheat oven to 190 degrees C.
  2. Wash thoroughly the butternut. Using a large knife, cut your butternut squash in half lengthwise. Scoop out the seeds and stringy bits from each half and discard (or save for roasting).
  3. Transfer the butternut squash, cut-side up into the oven tray and brush with vegetable oil, coating the entire surface of the squash. Season with salt, pepper and rosemary.
  4. Roast in the oven for approximately 45 minutes, or until soft, and fork-tender.
  5. Remove from oven and allow to cool. enjoy
