  11. Get 1/2 tsp Sea Salt
  12. Get 1/2 tsp Black cracked pepper
  13. Get 2 thick slices of a Courgette

It smells divine and tastes wonderful. Wrap halloumi slices in streaky bacon and fry until crisp and golden. Finely grate the cheese and mix with the dried mint. Chop a handful of the mint leaves and set aside.

  2. Heat up 1 tbls oil in a frying pan or wok (as i use alot) add the Shallots fry for 1 min then add the garlic, Ginger and italian herbs and mix in.

  5. Then the halloumi and fry for 1 min both sides
  6. Add the fresh basil and tomatoes and mix in fry for 1 min
  7. Then add the other tbls olive oil and the Advacado and sweet peppers cook for another min.
  8. Add salt and pepper and mix in then add the Pasta
  9. Lastly add the tomatoe puree and stir in and serve hot

Finely grate the cheese and mix with the dried mint. Chop a handful of the mint leaves and set aside. In the meantime, cook the pasta in the chicken stock. This delicious Halloumi Pasta is mixed with roasted tomatoes for a fresh and light pasta dish that still tastes super comforting.
