  1. Heat, on a medium to high heat, a drizzle of olive oil in a 20cm frying pan - In a small bowl beat the egg - Add the seasoning and mixed herbs - Pour the egg into the pan, it will naturally spread into a circular shape
  2. Cook for about 1 minute, the underside of the egg should be lightly browned and easy to flip over - Flip the egg and cook for another minute - Remove from the frying pan and lay two slices of proscuitto ham onto the egg
  3. In a small bowl add the avocado, lemon juice, coriander, seasoning and mash into a smooth paste - Spread over the ham - Starting at one end tightly roll up the wrap
