  7. Every now and then use a fork to stir the lentils. Once the lentils have cooked, turn heat off.
  8. Add in the cilantro and stir to mix.
  9. Allow to cool before serving with a mint sour cream/yoghurt sauce

Place the lentils in a medium saucepan with the water and bay leaf. Cut the onion in half, and add one half to the pot along with the crushed. Combine lentils, vegetable stock and bay leaf in a medium saucepan. Healthy and easy lentils and beans with cumin roast veges for lunch or dinner. Serve with garlicky yoghurt and dukkah.
