  2. Wilt spinach and plate up

  4. Once lentils are warm, take off heat and add 1 tsp Wholegrain mustard, salt and pepper
  5. Tip lentils onto spinach, add tomatoes, avo and goats cheese
  6. Top with a drizzle of tahini
