Add crushed tomatoes to heavy bottomed stock pot. The real secret of a perfect ragù sauce, what makes it so good, is time, or the several hours spent on the stove simmering slowly over low heat.   4. Next add the wine and cook until it has almost completed evaporated.
  5. Stir in the tomatos, passata, oregano, parsley, basil, salt and pepper (and red pepper flakes if using) and bring to a boil.
  6. Reduce the heat to a simmer and continue to cook for an hour and a half until the sauce has thickened, adding a little water if sauce is too thick.
  7. Taste, and adjust seasonings if needed.
  8. Serve on a pasta of your choice
  9. Eat!
