The ingredients needed to make My “go to” bolognese:
  1. Get 1 white onion
  2. Make ready 1 carrot
  3. Prepare 1 stick celery
  4. Prepare 2 cloves garlic crushed
  5. Get 1 tsp smoked paprika
  6. Prepare 1 tbsp tomato purée
  7. Make ready 1 glass red wine
  8. Get 400 g quality beef mince
  9. Get 2 bay leaves
  10. Prepare 1 tsp dried oregano
  11. Prepare 2 tins finely chopped tomatoes (quality matters)
  12. Get Seasoning
  13. Get Handful basil leaves, torn (optional)
Instructions to make My “go to” bolognese:
  1. Finely chop all of the veg (really fine)
  2. Heat 1 tbsp olive oil over a medium / low heat and fry the veg for 8-10 minutes until soft. Be careful not to burn the veg. Then add the smoked paprika and tomato purée and cook for one minute.
  3. Add the mince. Break it up and cook until brown. Then turn up the heat and add the glass of wine. Reduce the heat and cook until the wine has reduced by a half. Add the bay and oregano.
  4. The add the tinned tomatoes, seasoning and cook for 90 minutes over a low heat. Once cooked, tear up basil leaves and mix into the bolognese.
  5. Serve with spaghetti
