  1. Get 196 g tomatoes and basil
  2. Get 9.7 g salt
  3. Take water

Smaller and sweeter than the common garden variety tomato, cherry tomatoes add a hint of summer freshness to any meal, any time of year. Fermenting tomatoes does several things; it preserves them so that they will last longer (in your fridge, once fermented), a way of saving those summer-y flavours for later. It 'pickles' them -they will taste. But green tomatoes are great for fermenting.

Steps to make Fermented Tomatoes & Basil:
  1. Remove tomato tops and wash with basil
  2. Place glass jar on the scale and zero
  3. Add tomatoes and basil to the jar (196g including roughly 10 basil leaves and the remaining weight tomatoes)
  4. Fill the jar with water and note the final weight (389g)
  5. Complete the following calculation final weight x 2.5% = ? (389 x 2.5% = 9.7g)
  6. Decant the water from the tomatoes and basil
  7. The sum of the equation is the salt you need to add, stir this salt into the decanted water and then pour the mixture back in to the tomatoes and basil
  8. Fill a plastic bag with a little water to act as a weight
  9. Place plastic bag weight on jar and loosely top with a lid
  10. Leave to ferment on side for 3-10 days, taste to determine when it is done and then place in the fridge ready to use when you need

It 'pickles' them -they will taste. But green tomatoes are great for fermenting. The sugars haven't fully developed yet in these little green gems, making them perfect for a tangy, flavorful lacto-fermented pickle. The tomato naturally suppresses germination by encasing the seeds. When a tomato rots, it typically is fermenting.
