The ingredients needed to make Vegetarian Pad Thai:
  1. Take 200 gms Pad Thai noodles
  2. Take 1 tbsp oil
  3. Get 2 tsp garlic, chopped
  4. Take 1 tsp red chilli, chopped
  5. Get 1 onion, sliced
  6. Prepare 1/4 cup red and yellow bell pepper, sliced
  7. Prepare 1/4 cup roasted peanuts, crushed
  8. Prepare 2 tbsp coriander, chopped
  9. Make ready 1/4 cup spring green onions, chopped
  10. Prepare 1/4 cup tofu, chopped
  11. Take to taste Salt
  12. Get For the pad Thai sauce-
  13. Get 1/4 cup veg stock
  14. Make ready 3 tbsp soy sauce
  15. Make ready 3 tbsp brown sugar
  16. Get 1 tsp tamarind paste
  17. Get 1 tbsp red chilli sauce
  18. Prepare 2 tbsp Sriracha sauce
  19. Prepare to taste Salt
Steps to make Vegetarian Pad Thai:
  1. Soak the noodles in the warm water for 5-7 minutes until they are soft.
  2. Drain the water and keep aside.
  3. In a pan,mix all the pad Thai sauce ingredients to make the sauce.
  4. Bring the mixture to a boil and simmer for 2-3 minutes on the medium heat.
  5. Heat oil in a separate pan.
  6. Add garlic and red chilli and fry for a minute.
  7. Add onions, spring onions,red yellow bell peppers,tofu, salt, peanuts and saute for a minute.
  8. Add the cooked noodles and the sauce in the pan and toss well.
  9. Garnish with roasted peanuts and spring onions greens and serve hot
