Matcha Tiramisu, A Really Simple Dessert Tiramisu is actually a very simple, easy-to-make dessert. This matcha tiramisu is light and airy with the vegetal aromas of matcha blending in perfect harmony with the traditional tiramisu flavors. Each velvety-soft aspect of the dessert—the cream, mascarpone, and sponge—tones down the harsh, tannic hit of the tea. Extra matcha dusted on top not only amps up the flavor but gives the whole thing a bright, grassy glow.

The ingredients needed to make Matcha Tiramisu:
  1. Make ready 4 x 3 Savoiardi (Sponge Fingers)
  2. Get 1-2 tablespoons Matcha Powder
  3. Get 1 tablespoon Sugar
  4. Take 1/2 cup Hot Water
  5. Prepare 1-2 teaspoons Rum
  6. Get 1/2 teaspoon Matcha Powder for dusting
  7. Get Filling
  8. Make ready 1 Egg Yolk
  9. Get 2 tablespoons Caster Sugar
  10. Get 1/2 tablespoon Plain Flour
  11. Take 1/2 cup Milk
  12. Get 125 g Mascarpone
  13. Prepare 1/2 cup Thickened Cream *whipped
  14. Make ready 1 Egg White *FIRMLY whipped

Add the matcha slowly and whisk very, very well. Matcha Syrup: Combine all ingredients in a saucepot and let it boil. Once the sugar has melted, remove from heat and let it cool completely. First let's talk about the mascarpone cream.

Steps to make Matcha Tiramisu:
  1. Make soft custard first. Place Egg Yolk, Caster Sugar, Plain Flour and Milk in a heat-proof bowl and whisk well. Cook in the microwave at medium power about 500W for 2 minutes. Mix well, then cook again at medium power for 30 to 60 seconds, and mix well.
  2. Note: Naturally you can cook custard in a saucepan. Cook over a medium to low heat, stirring constantly, until custard comes to the boil and thickens.
  3. Allow the custard to cool, then place in the fridge. While the custard is cooling, whip Egg White and Cream in separate bowls, and prepare other ingredients.
  4. To make Matcha mixture, combine Matcha Powder and 1 tablespoon Sugar in a small bowl, add hot Water and mix well, then add Rum.
  5. Combine the cold soft custard and Mascarpone in a bowl. Add whipped Cream and mix well. Then add firmly whipped Egg White and gently fold into the mixture.
  6. Dip Sponge Fingers into the Matcha mixture, and place them in serving glasses. You can break Sponge Fingers to fit them in. Spoon the filling over the Sponge Fingers.
  7. Repeat for the second layer with the Sponge Fingers and the filling. Cover and refrigerate for at least 2 to 4 hours.
  8. Right before serving, dust the top with Matcha Powder.
  9. Note: You can simply replace the Matcha mixture with Espresso, and dust with Cocoa Powder for those who don’t enjoy Matcha flavour.

Once the sugar has melted, remove from heat and let it cool completely. First let's talk about the mascarpone cream. This is where I wanted to incorporate the matcha. One of the difficulties of baking with matcha is that it clumps up easily, so you often need a warm liquid to incorporate it well into a dish. This Tiramisu with matcha green tea powder doesn't use any heavy cream, but it has a rich taste and light and fluffy texture.
