  1. Preheat oven to 180C. - - Drizzle olive oil over sweet potato cubes. Season with salt, pepper and cumin. Toss gently to coat the seasoning. - Roast for 18 to 20 minutes or until cooked.
  2. In a large bowl, add corn, black beans, chopped red onion, quinoa and sweet potatoes. - In a small jug mix all the ingredients for dressing and whisk it. Pour over the salad and gently mix.
