  1. Get 2 cups Red/ Matta rice
  2. Make ready 3/4 cup grated coconut
  3. Prepare as per taste Salt
  4. Make ready as required Water
  5. Get For Stuffing:
  6. Prepare 1/4 cup Jaggery
  7. Get 1/4 cup grated coconut
  8. Make ready 1/4 tsp Cardamom powder

Heat oil and add all spices and let them sizzle. Add rice rava, salt, coconut and mix well. Now cool it and shape it into ball and make a hole in the center. Wash soaked rice twice and add it to mixer jar after draining.

Instructions to make Red Rice Sweet Pundi / Rice Dumplings:
  1. For early morning breakfast, thoroughly wash the red rice 3 to 4 times in water and soak it in clean water for 4 hrs in the previous evening. Grind it in a wet grinder with 3/4 cup of grated coconut. The more the coconut, the tastier the dumplings will be. Add salt as desired. Add little water(1/4 to 1/2cup) and grind it for 15 mins. The batter needs to be slightly coarse. The batter should be of thick solid consistency to shape into balls.
  2. Refrigerate the batter overnight during which excess moisture is absorbed. The next morning take out the batter and roughly shape it into lemon-sized balls. With a scraper, scrape the jaggery and mix it with 1/4 cup of grated coconut & cardamom powder.
  3. Flatten each dumpling in the palm and stuff 1 tbsp of jaggery - coconut mix. Shape it to form a round ball and seal it well. Stuff all the dumplings and keep to ready.
  4. Keep a steamer with sufficient water on high flame. Arrange the dumplings on the tray above the water. Close the lid and allow the water to boil. Once the water boils (steam appears from the sides of the lid) simmer the flame to the lowest and cook for 20 mins.
  5. Switch off the flame and open the lid. The sweet rice pundi is ready to be served.

Now cool it and shape it into ball and make a hole in the center. Wash soaked rice twice and add it to mixer jar after draining. Grind rice and coconut together to a coarse batter. Pour the ground paste in to heavy bottom wok, include salt. Cook until the dumplings float to the top.
